Quality Improvement and Value Addition of Processed Fish (Clarias gariepinus) Using Phenolic Compounds in Coffee Pulp Smoke

Page No: 1-5

The antioxidative and antimicrobial effects of coffee pulp were investigated against rancidity (lipid oxidation) and microbial growth on smoked fish samples. About thirty kilogram’s (wet weight) of catfish (Clarias gariepinus) were killed, gutted and immersed in 15% brine for a period of 4 minutes before smoking. The fishes were divided into three batches and exposed to three smoking sources (Electric cooker (Control), Dry coffee pulp smoke and firewood smoke) for about five hours at temperature range of 80 – 900C. The three smoked fish samples were then kept differently in high densed polythene bag and kept for twenty-one days. Significantly lower values than the control were obtained for Trimethylamine, Thiobabituric acid and Peroxide values in both Coffee and charcoal smoked fish samples. During the second week, a well pronounced antioxidative effect of coffee pulp was noticed both control and firewood smoked samples. Higher preference (Physical) was shown for coffee smoked sample, as coffee aroma characterized the sample when exposed to air. Mould growth was most delayed in the coffee smoked sample till about fifteen days of storage. Fillet cut from the Coffee and firewood smoked samples were still appreciable when tasted. No repulsive odour was detected in coffee smoked sample. Coffee pulp therefore has potential antioxidative effect on rancidity in smoked fish and could also be used to flavor smoked fish products.

Domestic Food Rituals in Indian Women’s Writing: A Comparative Study of Anita Desai and Jhumpa Lahiri

Page No: 1-16

Food has always held an important place in human culture, functioning not only as a basic necessity but also as a symbol of identity, tradition, and social relationships. In literary studies, particularly in women’s writing, domestic food rituals often represent more than routine household activities and reveal deeper meanings related to gender roles, emotional experiences, and cultural continuity. Kitchens, dining spaces, and the preparation and sharing of meals frequently become significant narrative settings where women express care, negotiate family expectations, and maintain cultural traditions. This study explores the role of domestic food rituals in women’s writing through a comparative analysis of the works of Anita Desai and Jhumpa Lahiri. Both writers portray domestic life in distinctive ways, using food practices to reflect women’s experiences and cultural identities. Desai’s narratives often focus on the complexities of middle-class Indian domestic life and the emotional and psychological dimensions of women’s roles within the household, Lahiri’s writings frequently depict diasporic contexts where food becomes a powerful marker of memory, nostalgia, and cultural continuity in foreign environments. Using a qualitative and comparative literary approach, the study analyzes the symbolic meanings, themes, and narrative functions associated with food rituals in selected works of the two authors. The findings reveals that domestic food rituals operate as important literary devices through which women characters express emotions, sustain cultural values, and negotiate their positions within family and society. The paper highlights that food rituals in women’s writing extend beyond everyday practices and serve as meaningful representations of gender, identity, memory, and cultural belonging.

Educational Restructuring and Inclusive Practices through Digital Learning in India

Page No: 1-11

India has witnessed a remarkable transformation in the field of education through rapid digitalisation, particularly after the outbreak of the COVID-19 pandemic. The sudden shift from traditional classroom teaching to online learning created a new educational paradigm commonly referred to as the “new normal.” Digital education has emerged as a significant tool in ensuring continuity in learning, accessibility, and inclusiveness across different sections of society. The pandemic drastically influenced teaching and learning methodologies worldwide, accelerating the adoption of online education platforms. The present study examines the restructuring of Indian education through digital transformation and examines its appropriateness, sustainability, and effectiveness for future generations. The paper also traces the evolution of the Indian education system from the Gurukul system to modern digital classrooms, highlighting the role of educational reforms, commissions, and policies in shaping contemporary education, emphasized that modern technology has significantly improved teaching methods, learning outcomes, and student engagement. The study further discusses how digital platforms, learning management systems, webinars, online collaborative learning, and virtual classrooms have transformed educational accessibility and innovation in India. Using systematic analysis and secondary sources such as journal articles, educational websites, government reports, and scholarly literature, this paper critically explores the role of digital education in promoting fairness and justice, especially among marginalized communities. The study identifies that digital learning not only supports educational continuity during crises but also contributes to nation-building and sustainable development. Digital education plays a crucial role in enhancing human resources and preparing societies for the demands of the digital era. The paper concludes that digitalisation has become an inevitable and transformative force in Indian education, enabling the vision of “Education for All” under Article 21A of the Indian Constitution. Despite challenges such as digital divide, cyber safety concerns, and technological accessibility, India continues to progress towards an inclusive, innovative, and sustainable educational future through digital transformation.
